How To Make Pineapple And Gorgonzola Toast.

Are you looking for something a little different for breakfast/brunch or lunch?

How about trying this Pineapple and Gorgonzola Toast?

A few days ago on the news, it mentioned pineapple are overtaking avocados as the fastest growing fruit in the country.

Del Monte – the nation’s favourite canned pineapple maker's sent me this yummy looking recipe to share and try out.

How To Make Pineapple And Gorgonzola Toast:

Serves 1-2

10 minutes preparation - 5 minutes cooking

Ingredients:
  • 2 slices sourdough
  • Butter, to spread
  • 1 tin Del Monte® Pineapple Slices
  • 2 wedges Gorgonzola cheese
  • Salt and pepper, to season

Pineapple And Gorgonzola Toast Method:

1. Preheat the grill to its hottest setting.

2. Toast the sourdough and spread with a little butter. Cover with a few slices of Del Monte® pineapple.

3. Slice the cheese wedge in two or three slivers and place them over the Del Monte® pineapple.

4. Carefully place the toasts under the hot grill for a few minutes until the cheese is just bubbling and the Del Monte® pineapple are warmed through.

5. Season with salt and pepper and serve immediately.

Are you looking for a weekend dinner recipe?

How about trying this Leg of lamb with crispy Italian crust?

Leg Of Lamb With Crispy Italian Crust:

Preparation time: 20 minutes
Cooking time: 2 hours 30 minutes
Total time:2 hours 50 minutes 

Serves: 6 

Ingredients:
  • 2kg whole leg of lamb 
  • 3 slices Parma ham 
  • 3 sprigs rosemary, broken up into smaller sprigs 
  • 2 tbsp olive oil 
  • 75g fresh breadcrumbs 
  • 50g Parmigiano Reggiano, finely grated 
  • Finely grated zest 1 lemon 
  • 300ml white wine 
  • 1kg Charlotte new potatoes, halved if large 
  • 500g Chantenay carrots 
  • 25g pack flat leaf parsley, finely chopped 

Leg Of Lamb With Crispy Italian Crust Method:

1. Preheat the oven to 180°C, gas mark 4. Using a sharp knife, make lots of incisions all over the lamb. Cut the Parma ham into strips and insert these into the holes, together with the rosemary sprigs, using the tip of a knife.

2. Rub the olive oil all over the lamb and season. Place the lamb in a large roasting tin. Mix the breadcrumbs, cheese and lemon zest together, and press all over the lamb, packing it down well with your hands until the top is completely coated. 

3. Pour the wine into the bottom of the tin. Carefully place in the middle of the oven and roast for 1 hour. Remove the lamb. Add the potatoes and carrots to the tin, and season. Toss well, place the lamb back on top, cover just the meat with foil and return to the oven for a further 1 hour. 

4. At the end of that time, remove the foil and return the tin to the oven for a further 30 minutes, or until the crumb coating is crunchy and golden, and the vegetables are tender. Leave everything to rest for 10-15 minutes. Sprinkle with the parsley and toss the vegetables in any cooking juices, then carve the lamb to serve.

You would never know these little balls of loveliness were actually a healthy chocolate treat so do n’t deprive yourself this Easter! 

Simple to make and packed full of super tasty ingredients. 

How To Make Easter Energy Balls:

Preparation time: 5-10 minutes

Makes: 20

Ingredients:
  • 100g (31/2oz) White's Organic Jumbo Oats
  • 150g (5oz) raw whole almonds
  • 175g (6oz) fresh Medjool dates, pitted
  • 1 tbsp. crunchy peanut butter
  • 3 tbsp. coconut oil
  • 3 tbsp. cacao powder
  • 2 tsp ground cinnamon
  • 1 tbsp. agave nectar

To Decorate:

Sesame seeds, Goji berries, toasted desiccated coconut, finely chopped pistachio nuts, raw cacao powder

How To Make:
  1. Place all the ingredients into a food processor and pulse until well combined. Using wet hands shape into 20 equal sized balls.
  2. These energy balls can be left plain or rolled in a variety of coatings - try using Oats, sesame seeds, goji berries, mixed seeds, toasted desiccated coconut, finely chopped pistachio nuts, raw cacao powder etc….

Cook's Tip:

Store in the fridge for up to 1 week but watch out, they won't last that long!

Brr, I can not believe it is Spring tomorrow. It was snowing all weekend!

We still have snow today too and it is freezing around here. No sign of going anywhere yet.

I am still layering up and wearing my Winter woollies. I need to try and get into the garage today as I packed all my snow coats away on Friday.

This is one of my favourite goto outfits at the minute. I love wearing these.

The jeans fit perfectly with room in for dinner. My blouse hangs nicely and the jumper is warm and cosy.

Hello Friends, happy Monday. How was your weekend? Did you go anywhere fun? Hope you had a lovely Mother's Day?

On Saturday me and my Daughter hopped on the train for a day out in Nottingham.

It feels like ages since we had a girly shopping day in Nottingham. We were off to buy something from my Daughter and Son for Mother's Day.

They asked me what I wanted and chocolates weren't one of them, this year 😉

Happy Sunday. Welcome to my blog today as I share My Sunday Photo.

I love Irregular choice shoes, I have an obsession with them and love to collect them. Trouble is I do not often wear them often as they are usually too high to wear for long without my feet aching. I can not usually walk out too far in them, that’s for sure.

See the pair of shoes I got for Christmas for example! : Monster From The Muppets: Irregular Choice.

I have been thinking of buying some flat ones for a while now. Some that I can wear any time of the day. For as long as I want to, but I always go for a high heeled pair at the last minute.

I had my eyes on the flat Alice in Wonderland one but you do not often see them in the shoes and I like to try them on before I buy them to make sure they are comfy.

When we went to Meadowhall last Saturday, Miss Piggy was calling me!

I showed then my Husband and he said if they feel comfy and I will wear them often, instead of keeping them hidden in my wardrobe, he will buy them me. 

They fit like a glove and he brought them me. Yeah. How nice of him!?

I love the new Miss Piggy Irregular choice shoes that my Husband bought me. I can not wait to wear them! Just got to wait for the snow to go now so I do not ruin them.

Hello Friends. Happy Friday. Any fun plans for the weekend? 

My Husband has the weekend off work so hopefully, we will be getting out and about somewhere fun!? I hope you are keeping nice and warm in this freezing cold weather? 

It has been so cold over the last few weeks. 

This week we have had light snow, heavy snow and now freezing snow {is there any other kind of snow!}. I love to see the snow at first. It looks beautiful when it is freshly fallen snow. Now it is freezing over and nothing worse for slipping and sliding on.

The snow is that bad that over the last few days the children have been off school as it has been closed due to the bad weather. It has been over 5 years since it was last closed with the snow. 

I thought it was cold last week but nothing like this.

Here I am layering up to keep nice and warm on or walk around the lake with my Husband, Daughter and Mollie The Collie a few weeks back.

We took a lovely Sunday afternoon stroll around and I was trying to keep warm and cosy. I took my glove off for a minute or two and my fingers went numb, brr!!!

A nice long walk in the fresh air really does blow the cobwebs away. A nice long walk that kept us moving very quickly before or we started to freeze too! I also got the chance to wear my new red Hunter wellies that my Husband got me for Christmas.

I was saving them for best; but why!? 

We have snow now and they are made for snow.
