Walnut And Cherry Yule Log: Christmas Recipe:

Prep: 30 minutes plus cooling
Cook: 10 minutes

Serves 10-12

How To Make: 
  • 3 medium eggs
  • 100g golden caster sugar
  • 75g plain flour
  • 3 tbsp cocoa powder plus extra for dusting (25g)
  • 50g Walnut Pieces, chopped
  • 100g chestnut puree
  • 2 tbsp icing sugar (20g)
  • 150ml double cream
  • 425g can black cherries, drained and roughly chopped

For The Icing:
  • 50g butter, softened
  • 100g icing sugar, sifted
  • 2 tbsp cocoa powder (15g)
  • 1-2 tbsp milk
  • 50g Walnut Pieces, chopped

Method:
  1. Preheat the oven to 200oC, gas mark 6. Grease and line the base and sides of a 30x20cm Swiss roll tin.
  2. Whisk the eggs and sugar together for about 3-4 minutes until pale and thick. Mix together the flour, cocoa and walnuts and fold into the egg mixture. Pour into the prepared tin and gently spread to the sides. Bake for 10 minutes.
  3. Sprinkle a little cocoa onto a large sheet of parchment and upturn the Swiss roll onto it. Peel off the parchment from the base and then roll it up from the longest end with the paper inside and allow to cool completely.
  4. Whisk the chestnut puree and icing sugar together until smooth then add the cream and whisk until soft peaks form. Unroll the Swiss roll, spread with the cream mixture and scatter over the cherries then roll it back up into a log.
  5. To make the icing, whisk the butter in a medium bowl until pale, gradually whisk in the icing sugar and cocoa powder and whisk until fluffy, adding a little milk if the mixture is too thick.
  6. Cut a thick diagonal slice from one end of the log. Arrange the log onto a serving plate then place the slice on the side with the cut against the cake to make a branch.
  7. Spread the log and branch with icing (but not the ends) and use a fork to make a bark effect. Scatter with walnuts and serve.

Cooks Tip:
  • Try spreading the cake with your favourite jam before adding the cream instead of adding cherries.

Christmas Nut Loaf With California Walnuts.

How To Make:

Prep: 15 minutes
Cook: 20-25 minutes

Serves 4-6

You Will Need:
  • 1 tbsp oil
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 400g can kidney beans, drained and rinsed
  • 180g pack whole chestnuts
  • 150g Walnut Pieces, roughly chopped
  • 50g cranberry sauce plus extra to serve
  • 1 tsp mixed spice
  • 2 tbsp roughly chopped oregano
  • 100g fresh breadcrumbs
  • 125ml hot vegetable stock

Method:
  1. Preheat the oven to 200oC, gas mark 6. Grease and line a 1kg loaf tin.
  2. Heat the oil in a small frying pan and fry the onion and garlic for 3-4 minutes until golden. Allow to cool slightly.
  3. Place the kidney beans and chestnuts in a food processor and roughly chop. Transfer to a large bowl and mix in the onions, walnuts, cranberry sauce, spice, herbs, and breadcrumbs, season well. Mix in the stock, press into the prepared tin and bake for 20-25 minutes or until golden.
  4. Cut into slices and serve with extra cranberry sauce and vegetables.

Cooks Tip:
  • Press the mixture into large balls and bake for 15 minutes to serve as part of a buffet. Try using cannellini beans or chick peas instead of the kidney beans.

How To Make Walnut And Chestnut Sausage Rolls:

Cook: 20-25 minutes

Makes 24

Walnut And Chestnut Sausage Rolls

You Will Need:
  • 1 tbsp oil
  • 1 onion, finely chopped (175g)
  • 450g sausagemeat
  • 50g dried cranberries
  • 100g Walnut Pieces, roughly chopped
  • 100g whole chestnuts, chopped
  • 6 sage leaves, chopped
  • 50g fresh breadcrumbs
  • 500g pack puff pastry
  • 1 medium egg, beaten

Method:
  1. Preheat the oven to 200oC, gas mark 6.
  2. Heat the oil in a small frying pan and fry the onion for 3-4 minutes until golden, allow to cool slightly then mix into the sausagemeat with the cranberries, 75g roughly chopped walnuts, chestnuts, sage and breadcrumbs, season well.
  3. Divide the pastry into 3 and roll each into a 34 x 15cm rectangle. Place a third of the filling in a sausage shape along the long length of each pastry. Brush one of the edges of pastry with egg and roll up to seal in the filling. Brush the rolls all over with the egg. Finely chop the remaining walnuts and roll the logs in to evenly coat.
  4. Cut each roll into 8 sausage rolls and place on 2 large baking trays, pastry seal side down. Bake for 20-25 minutes or until golden.

Cooks Tips:
  • These are great for a buffet or snack at Christmas time. 
  • Try using the filling as a stuffing for roast turkey, pork or chicken, or make larger sausage rolls for a supper dish.

Today I have a tasty superfood salad recipe to share with you.

Walnuts have long been considered synonymous with the festive season. Often enjoyed freshly cracked open with a nutcracker, or more commonly bought already shelled, walnuts are used in a variety of sweet and savoury seasonal dishes – or simply enjoyed on their own!

The unique taste and texture of walnuts makes them a supremely versatile ingredient and means they can do so much when it comes to Christmas cooking. Incorporating them into seasonal starters, sharers, mains and desserts will add crunch, sweetness, colour, texture and more.

Superfood Christmas Salad

How To Make Superfood Christmas Salad:

Prep: 15 minutes
Cook: 30 minutes

Serves 2

You Will Need:
  • 450g sweet potato, diced
  • 2 tbsp olive oil
  • ¼ ciabatta loaf, torn into bite-sized pieces (70g)
  • 50g Walnut Halves
  • 150g kale
  • 200g cooked roast turkey, torn into pieces
  • 50g pomegranate seeds
  • 3-4 tbsp Caesar dressing

How To Make:
  1. Preheat the oven to 200oC, gas mark 6.
  2. Place the sweet potatoes on a baking tray and toss in 1 tbsp oil then roast for 20 minutes or until tender. Remove to a bowl to cool. Add the ciabatta to the same tray and toss in the remaining oil, cook for 5 minutes then scatter the walnuts to one side of the tray and roast for a further 5-8 minutes until golden.
  3. Meanwhile, cook the kale in boiling water for 2-3 minutes, drain and run under cold water, squeeze out excess liquid.
  4. Toss kale with the sweet potato, turkey and pomegranate seeds and place on a serving platter. Top with the ciabatta croutons and walnuts, drizzle over the dressing and serve.

Cooks Tip:
  • Try using leftover roast parsnips instead of sweet potato, great for using up leftovers from the Christmas dinner.

Baked Figs, California Walnuts And Camembert.

Hello friends, over the next few days I will be sharing some tasty recipes from California Walnuts. They have created some new Christmas recipes, which all look delicious.

Walnuts have long been considered synonymous with the festive season. Often enjoyed freshly cracked open with a nutcracker, or more commonly bought already shelled, walnuts are used in a variety of sweet and savoury seasonal dishes – or simply enjoyed on their own!

The unique taste and texture of walnuts makes them a supremely versatile ingredient and means they can do so much when it comes to Christmas cooking. Incorporating them into seasonal starters, sharers, mains and desserts will add crunch, sweetness, colour, texture and more.

Today I am sharing a baked camembert recipe with you.

 Baked Figs, California Walnuts And Camembert

How To Make Baked Figs, California Walnuts And Camembert:

Prep: 10 minutes
Cook: 25-30 minutes

Serves 2 as a light lunch or 4 as a starter

 Ingredients:
  • 250g Camembert cheese
  • 2 sprigs rosemary
  • ½ ciabatta loaf, thinly sliced (140g)
  • 2 tbsp olive oil
  • 4 large figs, quartered (300g)
  • 75g Walnut Halves
  • 2 tbsp maple syrup

How To Make Baked Figs, California Walnuts And Camembert:

1.) Preheat the oven to 190oC, gas mark 5.

2.) Remove the wrapping from the cheese and place in a round ceramic dish just big enough for the cheese to fit snuggly. Make a few slits in the top and press in small sprigs of rosemary. Place on a baking tray.

3.) Brush the ciabatta slices with oil and place on a separate large baking tray.  Bake both in the oven (with cheese on the shelf above the bread) for 15 minutes until the bread is crispy and golden. Remove the bread and set aside and cook the cheese for a further 5 minutes. 

4.) Add the figs and walnuts to the camembert tray and drizzle over the maple syrup, bake for a further 5-8 minutes until the cheese has softened and the figs are just soft.

5.) Transfer to a serving platter, scatter with rosemary leaves and serve with the toasted bread.

Cooks Tip:
  • Great for sharing or as a light lunch, try spreading the bread with the cheese and top with figs and walnuts for a warm buffet treat. 
  • Try using garlic slices in addition to the rosemary in the cheese.
