Kids’ Layered Lunch Pots: Back to School with Watercress:

Prep time: 10 minutes
Makes 2 pots

Ingredients:
  • 50g bag watercress
  • 150g macaroni pasta, cooked
  • 1 tin tuna in brine
  • 2 tbsp mayonnaise
  • 1 orange pepper, de-seeded and sliced
  • 1 red pepper, de-seeded and sliced
  • 1 small tin sweetcorn, drained
  • Salt and pepper


Method:
  1. Drain the tuna and place into a small bowl. Mix with the mayonnaise and add a little salt and pepper if desired.
  2. Take two Kilner jars or other jars with tight fitting lids. Split the cooked pasta between each jar, then follow with the tuna mayonnaise, sweetcorn, and peppers, finally topping with the watercress. Seal the jars and keep them refrigerated for up to 24 hours until needed.

Salcombe Gin Launches Mediterranean Inspired Gin 'Rosé Sainte Marie' for Summer 2019

Salcombe Gin Launches Mediterranean Inspired Gin 'Rosé Sainte Marie' for Summer 2019:

Adventurous and luxurious Salcombe Gin, which embraces life on and around the water, is releasing 'Rosé Sainte Marie', a new Mediterranean-inspired gin. Available from early July, this exceptional dry rosé gin is being positioned alongside its flagship multi-award-winning London Dry Gin 'Start Point'.

Named after the iconic 'Sainte Marie' lighthouse which marks the Southern entrance to the Old Port of Marseille, from where 19th century Salcombe Fruit Schooners would load citrus fruits and herbs bound for England's ports. 'Rosé Sainte Marie' is inspired by the aromas, flavours and lifestyle of the South of France and is a celebration of adventure, colour, freshness and joy; capturing the vibrant spirit of the Mediterranean coast.

Angus Lugsdin, co-founder of Salcombe Distilling Co, comments: “We're extremely excited to launch this exceptional gin, our second commercial release, exactly three years after the launch of 'Start Point'. With so many overly sweet and synthetically coloured gins in the market, we set out to elevate the category by creating a dry pink gin with no added sugar, a nod to the crisp and dry rosé wines from Provence. The recipe draws inspiration from the heritage and trading routes of the Salcombe Fruit Schooners and the citrus fruits and herbs they carried back to England.”

Salcombe Gin 'Rosé Sainte Marie' is a delicate, fresh and truly exquisite gin, reminiscent of a balmy summer's evening sat outside on the terrace of your favourite restaurant, watching the world go by. Fragrant notes of fresh lemon peel and Provence herbs are complemented by the natural sweetness of red fruit and the distinctive perfume of white flowers and orange blossom carried on a sea breeze. Lavender and lemon verbena, along with a hint of white pepper, add subtle finesse. On the palate, it has fullness and intensity whilst remaining smooth with an endearing and lingering softness to finish.

Traditional juniper provides structure in the background partnered with a natural, but not overpowering, soft sweetness from strawberries and angelica. Twelve further hand-sourced botanicals including lemon verbena, fresh lemon and orange peels, rose petals, orange blossom and pink peppercorns are combined to create a truly exceptional gin that is elegantly soft and smooth.

'Rosé Sainte Marie' can be enjoyed from the beginning to the end of a meal, as an aperitif or a digestif, on the beach or beside the pool, but always when you need a little Mediterranean sunshine in your life.

It is purposefully dry in style, with no added sugar, letting the consumer control the desired level of sweetness of their G&T through their selection of mixer and garnish. For the ultimate pink G&T using Salcombe Gin 'Rosé Sainte Marie', simply fill a large wine glass with ice and add a large measure of gin to three parts premium Indian tonic water. Garnish with a slice of strawberry to accentuate the bouquet of red fruit or a twist of fresh lemon peel to bring the fragrant citrus to the fore.

'Salcombe Spritz' Cocktail Recipe:

A Mediterranean classic cocktail reinvented with the new Salcombe Gin 'Rosé Sainte Marie' to create a truly exceptional aperitif. This beautifully refreshing drink is easy to recreate and perfect for toasting summer moments amongst friends.

Ingredients:
  • 25ml Salcombe Gin 'Rosé Sainte Marie'
  • Fever-Tree Mediterranean tonic water
  • 15ml Aperol
  • Twist of orange peel
Method:

1.) Simply fill a large wine glass with ice, add the Salcombe Gin 'Rosé Sainte Marie' and Aperol. Top up with Fever-Tree Mediterranean tonic water, stir gently and garnish with a twist of orange peel on the side of the glass.

Sweet Potato Pie with Parma Ham and Robiola Cheese

Sweet Potato Pie with Parma Ham and Robiola Cheese:

It seems that spring has sprung early this year, and during those warmer days, why not soak up some glorious sunshine with an outdoor lunch or al fresco dining. Parma Ham – 100% natural with no added ingredients – is the perfect product to pair with an array of foods for a fresh and flavourful taste.

Sweet Potato Pie with Parma Ham and Robiola Cheese

This recipe for sweet potato pie with Parma Ham and Robiola cheese is the perfect dish to celebrate the arrival of spring. Enjoy it in the sunshine or make it for an evening of entertaining. This recipe serves 8 - 9 people.

Ingredients:

For The Crust:
  • 180g Ground rusk
  • 70g Butter (melted)
For The Stuffing:
  • 50g Parma Ham
  • 700g Sweet potatoes
  • 300g Robiola cheese
  • 30g Cream or milk
  • 2 tsp Corn starch
  • 2 Eggs
  • Extra virgin olive oil
  • Salt
  • Pepper

Additional Ingredients:
  • 100g Parma Ham
  • Rosemary sprigs

Method:
  1. Peel the sweet potatoes and cut them into slices about 2-3mm thick. Boil for 5-6 minutes in slightly salted water. Keep checking to ensure that the potato slices do not crack. Drain and place the sweet potatoes on a flat surface to cool.
  2. Cut 50g of Parma Ham into strips and then set aside.
  3. For the base, mix the ground rusk with the melted butter then place in a 22cm mould that is lined with baking paper. Ensure that the bottom of the mould is covered.
  4. Soften the Robiola cheese with the cream and then add in the eggs, salt, pepper, corn starch and the strips of Parma Ham. Mix thoroughly.
  5. Pour one third of this mixture onto the base in the mould. Spread one third of the potato slices over this mixture and add a pinch of salt. Repeat this process for two more layer of mixture and potatoes, ensuring that the top layer is your last third of potatoes.
  6. Brush the top layer with oil and flavour with pepper and rosemary. Bake at 170°C for 25 minutes, then grill at 200°C for 10 more minutes to brown the surface.
  7. Remove from the oven and leave to cool for 15-20 minutes. Place onto a serving plate and garnish with the remaining slices of Parma Ham and the rosemary.
