Isle Of Wight Muffin Tray Tomatoes With Mozzarella On Bruschetta

How to Make Isle Of Wight Muffin Tray Tomatoes With Mozzarella On Bruschetta:

Serves: 4

Preparation time: 5 minutes
Cooking time: 10 minutes

You’ll Need:

  • 6 Isle of Wight vine tomatoes
  • Olive oil
  • Salt and pepper
  • Sourdough bread
  • 2 garlic cloves
  • 1 ball of mozzarella cheese
  • A handful of basil

What To Do:

1.) Halve the tomatoes and put them facing upwards in an appropriate size muffin tin. Drizzle of oil over each tomato and add a sprinkle of salt and pepper. Roast at 190˚c for 10 minutes or until soft but not collapsed.

2.) Grill slices of sourdough on both sides then rub with a garlic clove and drizzle a little olive oil over the top.

3.) Top the toast with torn mozzarella and then carefully spoon on the tomatoes. Finish with a few basil leaves if you like.
